PURPOSE Tallahassee requires a heavy-duty dual-temperature food transport cart capable of maintaining both heated and refrigerated food products during institutional meal service operations. The unit shall be designed for correctional or high-volume institutional food service environments. 2. GENERAL REQUIREMENTS The contractor shall provide a new, commercial-grade dual-temperature transport cart meeting the following minimum salient characteristics and specifications. 3. CONSTRUCTION a.
